Reuben Pizza

I know you love pizza, but are you also a reuben fan as well? Boy, am I! So I combined the two here in an easy to make dinner perfect for any weeknight, but especially tasty on Fridays after a wild week.

Simply start with homemade or store bought pizza dough of choice. The dough pictured here is a homemade sourdough pizza crust recipe that I am very proud to say I have mastered. Next top with torn corned beef, as much sauerkraut as you wish, and shredded Swiss cheese. For next level pizza crust, sprinkle with everything bagel seasoning (refer to my everything bagel popcorn recipe). After baking don’t forget to drizzle with thousand island dressing, and enjoy!

Kitchen Tip.

When making homemade pizzas, I have found a few things are key. First of all, always brush the crust with olive oil and add seasoning of some kind before baking. Here I used one of my favorite for crust, everything bagel seasoning, but garlic salt is also delicious! The olive oil ensures the crust gets nice, golden and crispy just how we like it!

Secondly, I was never a big fan of baking pizza in the oven because the dough always seemed undercooked towards the center, so here is what I discovered. Place pizza on one of the bottom racks of the oven, this will prevent the cheese and toppings from overcooking while the crust still has a ways to go. It is also important to let your pizza rest for 5 minutes after you pull it out of the oven, whether you are cooking it on a metal baking sheet or a pizza stone. I have found that this is important to allow the crust to finish cooking and get nice and golden evenly across the bottom.

Probiotic foods such as sauerkraut, kimchi, kefir, yogurt, miso, tempeh or kombucha provide live microbes that can help support a healthy balance in our gastrointestinal tract. Research on this topic suggests these fermented foods may positively influence our gut bacteria.1 Studies have their limitations, and evidence to support which probiotic strains are best to treat certain symptoms however is still unknown for the most part. What we do know? Our guts loves diversity! So aim to include a variety of fermented foods in your diet on a regular basis. When purchasing foods such as sauerkraut, aim to purchase these from the refrigerated section at the grocery store as these will have the live cultures we love.

I know you love pizza, but are you also a reuben fan as well? Boy, am I! So I combined the two here in an easy to make dinner perfect for any weeknight, but especially tasty on Fridays after a wild week.

Ingredients

  • Pizza dough (homemade or store bought)
  • 1 cup shredded Swiss cheese
  • 1 cup sauerkraut (more or less per preference)
  • 1/4 lb thinly sliced corned beef
  • thousand island dressing
  • 1 Tbsp olive oil
  • optional everything bagel seasoning for the crust

Instructions

  1. Preheat oven according to pizza dough directions (I preheat to 500F for my homemade dough).
  2. Using a rolling pin or just your hands, spread dough evenly out on a baking sheet or pizza stone. 
  3. Tear sliced corned beef into smaller pieces and distribute evenly over dough. Next top with sauerkraut, ensuring you have squeezed out most of the moisture. Finally sprinkle shredded Swiss cheese on top of other toppings. 
  4. Brush crust with olive oil. If using everything bagel seasoning for the crust (which I highly recommend), sprinkle evenly all over crust.
  5. Place in the oven and bake according to dough directions (mine take about 25 minutes), or until crust is golden. 
  6. Once pizza is done baking, remove from oven and drizzle with thousand island dressing. 
  7. My favorite way to enjoy it is with a nice caesar salad and a cold beer!
