Salmon Burgers

Here is a nutritious weeknight meal at its finest! It’s a not-so-fancy but seems sort of fancy dinner that will wow dinner guests while never hinting at how easy it was to prepare. This recipe is made primarily of pantry staples that you most likely already have on hand. With the bonus nutrition benefits of salmon, how can you not try it?!

Dump all of the ingredients in a bowl, mix with your hands and divide into patties. Easy peasy lemon squeezy (there is literally a squeeze of lemon in it)! The burger cook very quickly so make the patties ahead of time and quickly cook up right before serving.

Kitchen Tip!

Get yourself a cast iron skillet. Seriously. I lived years and years without one, and now that we were gifted one from some sweet friends, it is used DAILY in our kitchen. The cast iron pictured below is from a Portland based company called Finex (not sponsored but a girl can dream) and I couldn’t recommend it more.

If you do not yet have a cast iron skillet in your kitchen arsenal, at least get yourself some high quality pans with preferably one that is heavy bottomed. This will make cooking things like salmon burger a dream!

Health Benefit!

Did you know salmon is one of the best dietary sources of vitamin D, a nutrient most of us do not get enough of? Vitamin D is what we call a fat soluble vitamin, which is why fatty fish are a great dietary source! Most of us synthesize vitamin D from the sun however in many areas of the United States, such as Oregon where I live, you are only able to get vitamin D from the sun a few months out of the year. Therefore many of us must rely on supplementation, but eating dietary sources such as salmon is always helpful!

So what does vitamin D do? Vitamin D helps our bodies absorb calcium, therefore adequate levels are very important for bone health. Vitamin D plays many other roles in our body including immune function, cell growth, neuromuscular function, and glucose metabolism.[1] Aim to eat fatty fish at least twice per week to provide vitamin D as well as help with heart health!

A nutritious weeknight meal made primarily of pantry staples? Yes please!

Ingredients:

  • 2, 6oz cans salmon, boneless and skinless
  • 1 1/2 tablespoons fresh dill, chopped
  • 1 green onion, both green and white part thinly sliced
  • 1 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon mayonnaise 
  • 2 tablespoons Panko breadcrumbs
  • 4-6 slices lil mamas peppers, chopped
  • 1 egg
  • Pinch salt, pepper, and red pepper flakes
  • 1 tablespoon olive oil
  • Suggested burger toppings, aioli, pickled red onion, arugula, avocado and tomato slices

Instructions:

  1. Mix all of the ingredients, except olive oil, in a large bowl until well combined.
  2. Using your hands, form salmon mixture into four even sized patties.
  3. Heat olive oil in cast iron or heavy bottom skillet on medium heat.
  4. Once olive oil is hot, carefully place salmon patties evenly placed in skilled. Cook for 2-3 minutes per side, or until slightly browned. Removed to a paper towel lined plate.
  5. Enjoy on a toasted bun with your favorite toppings!
